I have had the same idea, getting a used fridge and turning the thermostat up to around 50F - 55F. The issue is, what about humidity? There is no way to control the humidity in the fridge. That is what the expensive home cellar manufacturers will tell you. Now is that really a big problem? or are they just wanting your big $$$$$? I don't know the answer.
